Kielbasa and Cheesy Potato Casserole is a comforting dish combining smoky kielbasa sausage with tender potatoes in a creamy cheese sauce.
Ingredients
- 1 lb kielbasa sausage, sliced
- 3 large potatoes, peeled and diced
- 1 cup diced onion
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 cup chicken broth
- 1 cup heavy cream
- 1 can cheddar cheese soup
- 1 1/2 cup shredded sharp cheddar cheese
- 1 teaspoon paprika
- 1 teaspoon black pepper
- Salt to taste
Instructions
1. Preheat your oven to 350°F and grease a 9×13-inch baking dish.
2. Brown the kielbasa in olive oil over medium heat until golden, then transfer to a plate.
3. Sauté the diced onion in the same skillet until soft, then add minced garlic and cook for 30 seconds.
4. Pour in chicken broth and heavy cream, stirring, then add cheddar cheese soup, paprika, and black pepper. Stir in 1 cup of shredded cheddar until melted.
5. In the prepared baking dish, combine diced potatoes and browned kielbasa. Pour cheese sauce over and stir gently. Top with remaining 1/2 cup cheddar cheese.
6. Cover with foil and bake for 60 to 75 minutes until potatoes are fork-tender. Remove foil for the last 10 minutes for a crispy top.
7. Let sit for a few minutes before serving.
Notes
Choose uniformly sized potato pieces for even cooking.
Avoid overcooking the kielbasa as it continues cooking in the oven.
Consider adding vegetables like bell peppers or spinach for extra nutrition.
