Ingredients
- 12 slider buns
- 4 large russet potatoes, peeled and diced
- 2 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 6 slices bacon, cooked and crumbled
- 1/4 cup sour cream
- 2 tablespoon chopped chives
Instructions
1. Preheat your oven to 375°F.
2. Boil the diced russet potatoes in salted water until tender, about 10 minutes. Drain well.
3. In a mixing bowl, combine the boiled potatoes with olive oil, garlic powder, salt, and black pepper. Mash until silky-smooth.
4. Slice the slider buns in half. Spread the mashed potato mixture on the bottom half of each bun.
5. Sprinkle shredded cheddar and mozzarella cheese over the potatoes, and add crumbled bacon.
6. Top with the upper half of the bun and bake for 15-20 minutes until cheese is bubbly and buns are golden brown.
7. Drizzle with sour cream and sprinkle with chopped chives before serving.
Notes
Choose russet potatoes for creamier mashed potatoes.
Mix cheeses before sprinkling for better melt.
Spread a thin layer of cheese on the bun to prevent sogginess.
Assemble sliders ahead of time and refrigerate before baking.
