Ingredients
- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 ounce) black beans, drained and rinsed
- 1 can (15 ounce) corn, drained
- 1 can (10 ounce) diced tomatoes with green chilies
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cup cooked rice
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/4 cup chopped fresh cilantro (for garnish)
- Sour cream (for serving)
Instructions
1. 1. Preheat your oven to 350°F.
2. 2. In a large skillet, brown the ground beef over medium heat. Once it’s starting to brown, add in the chopped onion and minced garlic. Cook until the onion is translucent.
3. 3. Stir in the black beans, corn, diced tomatoes with green chilies, chili powder, cumin, paprika, salt, and black pepper. Let this mixture simmer for about 5 minutes.
4. 4. In a large mixing bowl, combine the seasoned beef mixture with the cooked rice. Stir until everything is evenly mixed.
5. 5. Pour half of the beef and rice mixture into a greased 9×13 inch baking dish. Sprinkle half of the shredded cheddar and Monterey Jack cheese on top. Layer the remaining beef mixture, followed by the rest of the cheese.
6. 6. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
7. 7. Sprinkle with fresh cilantro and serve warm with a dollop of sour cream.
Notes
Choosing lean ground beef helps keep the casserole from becoming too greasy.
For a lighter option, consider using ground turkey or quinoa.
Adjust spice levels according to your family’s preference by adding more chili powder or jalapeños.
Experiment with different cheeses like pepper jack for extra flavor.
