Ingredients

- 2 tablespoon extra virgin olive oil, divided
- 2 tablespoon fresh dill, finely chopped
- 1 teaspoon dried oregano
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly cracked black pepper
Instructions
1. Preheat the oven to 400°F. Grease a 9×13-inch baking dish with 1 tablespoon of olive oil.
2. Spread the fresh baby spinach across the bottom of the greased dish.
3. Pat the salmon fillets dry and arrange them over the spinach in a single layer.
4. Season the salmon with sea salt, cracked black pepper, and dried oregano.
5. Scatter the chopped sun-dried tomatoes and crumbled feta over the salmon.
6. Drizzle the remaining tablespoon of olive oil over the top.
7. Bake for 12–15 minutes until the salmon is cooked through and flakes easily with a fork.
