Ingredients
- 2 to 3 cup cooked shredded or diced chicken
- 1 1/2 to 2 cup corn kernels
- 1/4 to 1/2 red onion, diced
- 1/4 cup fresh cilantro, chopped
- 1/4 to 1/2 cup cotija or queso fresco, crumbled
- 1 jalapeño, finely diced (optional)
- 1/3 to 2/3 cup mayonnaise
- 1/4 to 1/2 cup sour cream or Greek yogurt
- 2 tablespoon lime juice
- 1 to 1 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- Pinch of cayenne or smoked paprika (optional)
Instructions
1. 1. Cook or char the corn until tender, then let cool slightly.
2. 2. In a large bowl, combine cooked chicken, charred corn, diced red onion, chopped cilantro, and crumbled cheese. Add jalapeño if desired.
3. 3. In a separate bowl, whisk together mayonnaise, sour cream or yogurt, lime juice, chili powder, garlic powder, salt, pepper, and cayenne or paprika if using.
