Ingredients
- 4 boneless skinless chicken breasts
- 2 tablespoon olive oil
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 6 tablespoon unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon fresh thyme leaves
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chicken broth
- 1/4 cup dry white wine
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon garlic powder
Instructions
1. Preheat your oven to 400°F. Allow your chicken breasts to sit at room temperature for about 20 minutes.
2. Place the chicken breasts between two pieces of plastic wrap and pound them to an even thickness of 1 inch. Pat the chicken dry, then drizzle with olive oil and season both sides with kosher salt, black pepper, garlic powder, onion powder, and smoked paprika.
3. In a small saucepan, melt the unsalted butter over medium heat. Add the minced garlic and sauté for about one minute until fragrant. Remove from heat and stir in thyme, rosemary, parsley, Dijon mustard, lemon juice, salt, and black pepper until combined.
4. Heat an oven-safe skillet over high heat and add olive oil. Sear the chicken breasts for 3 to 4 minutes on each side until golden crust forms.
5. Spoon half of the herb butter over each chicken breast. Transfer the skillet to the oven and bake for 18 to 22 minutes, or until the internal temperature reaches 165°F. Baste with remaining herb butter halfway through.
6. Once done, remove the chicken from the skillet and let it rest tented with foil. Place the skillet over medium heat and pour in chicken broth, white wine, and Worcestershire sauce. Scrape up browned bits and simmer for 3 to 5 minutes until reduced by half.
7. Slice the chicken breasts and arrange on a platter. Drizzle pan sauce over the chicken and garnish with fresh herbs and lemon wedges.
Notes
Allow your chicken to rest after cooking; this lets the juices redistribute throughout the meat. Always check the internal temperature; it should reach 165°F for perfectly cooked poultry.
