  • 1 1/2 pound baby potatoes, halved
  • 1 pound asparagus, trimmed and cut into 2-inch pieces
  • 3 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

1. Preheat your oven to 400°F and lightly grease a large sheet pan.

2. In a large bowl, toss the halved baby potatoes with 2 tablespoon of olive oil, half of the minced garlic, salt, black pepper, and dried oregano.

3. Spread the seasoned potatoes in a single layer on the prepared sheet pan and roast them in the preheated oven for 20 minutes.

4. While the potatoes are roasting, toss the trimmed and cut asparagus with the remaining olive oil, garlic, and lemon juice in a separate bowl.
