Ingredients
- 1/2 pound penne pasta, cooked and drained
- 1 pound boneless, skinless chicken breast, cut into 1-inch pieces
- 1 tablespoon Cajun seasoning
- 2 tablespoon olive oil
- 2 tablespoon unsalted butter
- 3/4 cup yellow onion, diced
- 1 cup red bell pepper, sliced
- 1/2 cup jalapeño pepper, sliced
- 1 tablespoon fresh garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoon all-purpose flour
- 2 1/4 cup chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
Instructions
1. Cook the penne pasta according to the package directions. Drain and set aside.
2. Coat the chicken pieces evenly with the Cajun seasoning.
3. Heat the olive oil in a large skillet over medium-high heat.
4. Add the chicken and cook for 6–8 minutes, turning occasionally, until golden brown and fully cooked. Transfer it to a plate.
5. Melt the butter in the same skillet.
6. Add the onion, red bell pepper, jalapeño, garlic, salt, and black pepper. Cook for 3–5 minutes, until the vegetables soften and the onion becomes translucent.
7. Sprinkle the flour over the vegetables and stir until it is completely absorbed by the butter.
8. Slowly pour in the chicken broth, stirring continuously to prevent lumps.
9. Stir in the heavy cream and bring the sauce to a gentle boil.
10. Reduce the heat to medium-low and simmer for 2–4 minutes, until the sauce begins to thicken.
11. Stir in the Parmesan cheese until melted and fully incorporated.
12. Return the chicken to the skillet and add the cooked penne.
13. Toss gently until the chicken and pasta are evenly coated in the creamy sauce. Remove from the heat and serve immediately.
Notes
Rattlesnake Pasta is delightful on its own, but with a few side dishes, you can create a full-bodied meal. Here are some ideas:
Serve with a refreshing garden salad or a classic Caesar salad to balance the creaminess.
Pair with garlic bread for that extra crunchy texture.
Garnish your plate with fresh herbs like parsley or cilantro, and sprinkle some extra grated Parmesan cheese for added flavor.
A squeeze of fresh lime juice can add a zesty contrast that elevates the dish beautifully.
