Ingredients
- 4 cup chicken broth
- 2 cup water
- 1 cup quick-cooking grits
- 1 cup heavy cream
- 2 cup shredded sharp cheddar cheese
- 2 tablespoon butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoon olive oil
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 1 pound raw shrimp, peeled and deveined
- 1 tablespoon Cajun seasoning
- 1 teaspoon paprika
Instructions
1. Preheat your oven to 350°F and grease a 9×13-inch casserole dish.
2. In a large saucepan, bring the chicken broth and water to a boil. Gradually whisk in the grits and reduce the heat, simmering for 5 minutes until thickened.
3. Remove the grits from the heat and stir in the heavy cream, butter, 1½ cup of the shredded cheddar cheese, salt, and pepper until smooth and creamy.
4. In a skillet, heat the olive oil over medium heat. Sauté the onion, bell pepper, and garlic until softened.
5. Add the raw shrimp, Cajun seasoning, and paprika to the skillet. Cook for 3-4 minutes until the shrimp are pink and cooked through.
6. Fold the shrimp mixture into the prepared grits, mixing until well combined.
7. Transfer the mixture to the prepared casserole dish and top with the remaining ½ cup of shredded cheddar cheese.
8. Bake the casserole for 25-30 minutes, or until it’s bubbly and the cheese on top is golden brown.
9. Allow the Shrimp & Grits Casserole to cool for 10 minutes before serving to let the flavors meld together.
