Smoked sausage and potato bake is a one-pan comfort food that combines tender potatoes, savory smoked sausage, and aromatic vegetables into a hearty meal.
Ingredients
- 2 1/2 pound baby potatoes, halved
- 1 1/2 pound smoked sausage, sliced into rounds
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 2 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon red pepper flakes
- 1/2 cup butter, cut into small pieces
- Salt to taste
Instructions
1. Preheat your oven to 350°F and lightly grease a 9×13-inch baking dish.
2. In a large mixing bowl, combine halved baby potatoes with olive oil, garlic powder, black pepper, paprika, red pepper flakes, and a pinch of salt. Toss until evenly coated.
3. Add sliced smoked sausage, chopped onion, and green bell pepper to the potato mixture. Stir to combine.
4. Transfer the mixture to the prepared baking dish and dot with butter pieces.
5. Cover with foil and bake for 45 to 50 minutes or until potatoes are fork-tender. Remove foil and stir gently before serving.
Notes
Leftovers keep in airtight containers for up to four days. Reheat gently in a 325°F oven for about 15 minutes.
