Smothered Chicken and Rice is a comforting dish that combines tender chicken thighs, rich gravy, and fluffy white rice.


Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 cup all-purpose flour (for dredging)
  • 2 tablespoon butter (plus more if needed)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoon flour (for roux)
  • 2 cup chicken broth
  • 1/2 cup heavy cream
  • 2 cup cooked white rice
  • Fresh parsley, chopped (for garnish)

Instructions

1. Season the chicken by patting it dry and seasoning with salt, pepper, paprika, and garlic powder. Lightly dredge the chicken in flour, shaking off any excess.

2. In a large skillet, melt the butter over medium heat. Sear the chicken thighs, skin-side down, until golden brown, about 5-6 minutes per side. Remove the chicken from the skillet and set it aside.

3. In the same skillet, add the chopped onion and minced garlic. Cook until the onions are softened and the garlic is fragrant.

4. Stir in 2 tablespoon of flour and cook for 1-2 minutes, stirring constantly. Gradually whisk in the chicken broth and heavy cream until the mixture is smooth and creamy.

5. Return the seared chicken thighs to the skillet, cover, and simmer on low heat for 30-35 minutes, or until the chicken is fully cooked and tender.

6. To serve, spoon the delicious smothered chicken over a bed of cooked white rice. Garnish with fresh, chopped parsley.

Notes

Leftover Smothered Chicken and Rice can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, place the chicken and gravy in a saucepan and warm over medium-low heat, stirring occasionally.
