  • 1 can (15 ounce) black beans, rinsed and drained
  • 1 can (15 ounce) corn, drained
  • 1 cup chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste

Instructions

1. Pat the chicken cubes dry with paper towels and season them generously with salt and pepper.

2. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the onion and cook until softened, about 5-7 minutes.
