- 2 cup fresh cucumbers
- 1/4 cup rice vinegar
- 1 tablespoon fish sauce
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup fresh cilantro, chopped
- 1/4 cup peanuts, chopped
Instructions
1. Thinly slice the cucumbers and optionally salt them to draw out moisture.
2. In a small bowl, combine rice vinegar, fish sauce, sugar, and salt. Stir until dissolved and let cool.
3. In a large bowl, toss the cucumbers with the dressing and mix well.
4. Just before serving, stir in cilantro and sprinkle with peanuts.
Notes
Chill for about 20 minutes before serving for best flavor.
