Ingredients
- 4 large russet potatoes
- 8 ounce cream cheese, softened
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
1. Preheat your oven to 400°F. Bake the washed russet potatoes for about 1 hour until tender. Allow to cool slightly.
2. Cut the potatoes in half and scoop out the insides into a mixing bowl. Mash until smooth.
3. Add cream cheese, sour cream, 1/2 cup cheddar cheese, crumbled bacon, green onions, garlic powder, salt, and pepper to the mashed potatoes. Stir until combined.
4. Spread the mixture into a baking dish and top with remaining 1/2 cup cheddar cheese.
5. Bake for another 20 minutes or until bubbling and golden brown.
6. Let cool slightly, garnish with extra green onions, and serve hot with tortilla chips or veggies.
