Ingredients
- 4 ounce cream cheese
- 1/3 cup buffalo wing sauce
- 1/4 cup ranch dressing
- 3 cup shredded cooked chicken
- 1 1/3 cup shredded cheddar cheese
- 1/3 cup blue cheese crumbles
- 12 fajita or soft taco-sized flour tortillas
- cooking spray
- sliced green onions for garnish
- extra blue cheese crumbles for garnish
Instructions
Step 1: Preheat the oven to 425°F. Prepare a baking sheet with parchment paper or cooking spray.
Step 2: In a large mixing bowl, beat together the softened cream cheese, buffalo wing sauce, and ranch dressing until smooth. Fold in the shredded chicken, cheddar cheese, and blue cheese crumbles until evenly combined.
Step 3: Wrap tortillas in a damp paper towel and microwave for about 30 seconds to make them pliable.
Step 4: Take about 3 tablespoon of the buffalo chicken filling and spoon it onto the lower third of each tortilla. Roll tightly, tucking in the ends, and place seam side down on the baking sheet.
Step 5: Lightly spray the tops of the taquitos with cooking spray and bake for 12 to 15 minutes until golden brown and crispy.
Step 6: Let cool for 2 minutes before garnishing with sliced green onions and extra blue cheese crumbles. Serve warm with ranch or blue cheese dressing and extra buffalo sauce.
Notes
For convenience, use leftover rotisserie chicken. Adjust buffalo sauce based on your preferred spiciness. Ensure cream cheese is softened for smooth mixing. Store leftovers in an airtight container in the fridge for up to three days or freeze before baking.
