Ingredients
- 1 1/2 pound boneless skinless chicken breasts
- 2 tablespoon olive oil
- 1 lime, zested and juiced
- 1/3 cup minced fresh cilantro
- 1 clove garlic, crushed
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 1/2 cup cooked jasmine rice
- 1/3 cup minced fresh cilantro
- 1 teaspoon lime zest
- 1 tablespoon lime juice
- Salt and pepper, to taste
- 1 large avocado, pitted, peeled and sliced
- 1 tablespoon lime juice
- 1/4 teaspoon salt
- 1 cup grape tomatoes, halved
- Fresh cilantro leaves for garnish
- Lime wedges
Instructions
1. Make Marinade: In a large mixing bowl, whisk together the lime juice, olive oil, minced cilantro, salt, black pepper, and crushed garlic.
2. Marinate Chicken: Add the chicken cutlets to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 1 hour.
3. Cook Chicken: Preheat your broiler and place the marinated chicken on a broiler-safe pan set on a broiling rack. Broil the chicken on high for about 8 minutes, flip, and continue cooking for an additional 8-10 minutes, or until the chicken’s internal temperature reaches 165°F. Let it rest for 10 minutes after cooking.
4. Prepare Rice: While the chicken is resting, stir the warm cooked jasmine rice with lime zest, the remaining cilantro, and season it with salt and pepper.
5. Prepare Avocado: In a small bowl, gently toss the sliced avocado with lime juice and salt.
6. Assemble: To serve, evenly divide the rice among plates. Top each serving with a chicken breast, a quarter of the avocado slices, and a portion of the halved grape tomatoes.
7. Serve: Garnish with fresh cilantro leaves and lime wedges. Serve immediately for the best experience!
