  • 4 boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoon olive oil, divided
  • 2 cup chopped fresh spinach
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup roasted red peppers, chopped
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 tablespoon kalamata olives, sliced
  • 1 tablespoon fresh basil leaves, torn
  • 1 teaspoon garlic, minced
  • 1 teaspoon red chili flakes
  • 1 tablespoon olive oil

Instructions

1. Preheat your oven to 375 degrees F.

2. In a small bowl, combine garlic powder, paprika, oregano, black pepper, and salt. Pat the chicken breasts dry and rub the seasoning mixture all over each breast. Let sit while preparing the stuffing.

3. In a medium bowl, mix together spinach, feta cheese, roasted red peppers, sun-dried tomatoes, kalamata olives, basil, minced garlic, and red chili flakes with a tablespoon of olive oil. Adjust seasoning to taste.

4. Cut a deep pocket into the side of each chicken breast and fill with the stuffing mixture. Secure openings with toothpicks.

5. In a large oven-safe skillet, heat the remaining tablespoon of olive oil over medium-high heat. Sear each stuffed chicken breast for about 2 to 3 minutes on each side until golden brown.

6. Transfer the seared chicken to an ovenproof dish and bake for 15 to 20 minutes until the internal temperature reaches 165 degrees F. Let rest for a few minutes before serving.

Notes

Serve with a Greek salad or roasted vegetables for a complete meal. Consider adding a yogurt-based sauce for extra flavor.
