  • 1/2 teaspoon black pepper
  • 14.5 ounce diced tomatoes with juices
  • 1 cup chicken broth
  • 2 cup heavy cream
  • 1 pound cheese tortellini
  • 2 ounce cream cheese, softened
  • 1 cup freshly grated Parmesan cheese, divided
  • 2 cup fresh baby spinach
  • Fresh parsley for garnish

Instructions

1. Brown the Sausage: Heat the olive oil in a large deep skillet over medium-high heat. Add the Italian sausage, breaking it apart with a wooden spoon. Cook for about 5 to 6 minutes until browned and crumbled. Drain excess fat, leaving about a tablespoon behind.

2. Sauté Aromatics: Add the diced yellow onion and cook for around 3 minutes until softened. Stir in the minced garlic, Italian seasoning, red pepper flakes, salt, and black pepper. Cook for about a minute until fragrant.

3. Build the Sauce: Pour in the diced tomatoes with their juices and chicken broth. Scrape up the browned bits from the bottom of the skillet. Mix well, then pour in the heavy cream and bring to a gentle boil.

4. Cook the Tortellini: Add the tortellini directly into the sauce. Stir to coat, reduce heat to medium, and cook uncovered for about 8 to 10 minutes, stirring occasionally.

5. Make it Extra Creamy: Add the softened cream cheese and stir until melted. Mix in 3/4 cup of the Parmesan cheese until smooth.

6. Add Spinach: Fold in the fresh baby spinach and cook for another 1 to 2 minutes until wilted. Adjust seasoning with more salt or pepper if needed.
